1-2 sweet potato
1/2 red onions
Salt and pepper
1 lemon or lime
280 g [10 oz] bacon
 Preheat the oven to about 200 C / 390 F
 Cut the sweet potato into about 1 cm 2/5 inch thick slices. Put them in a oven proof mould, pour some olive oil over, season with salt and pepper. Bake in the oven for about 15 minutes until they are soft and golden.
 Mix avocado, finely chopped red onions, juice from lime / lemon, salt and pepper with the mixer until it has a creamy consistency.
 Fry the bacon slices and lay them on a double sheet of kitchen paper to drain off the grease.
 Place the sweet potatoes slices on a serving dish and add a desired amount of avocado cream on each.
 Top the avocado cream with bacon slices.
Tip: If you form the bacon while it is hot, it stiffens in that shape.
