Sweet Potato with Avocado Cream and Crispy Bacon

Sweet Potato with Avocado Cream and Crispy Bacon

8 servings

1-2 sweet potato
Olive oil
1 avocado
1/2 red onions
Salt and pepper
1 lemon or lime
280 g [10 oz] bacon


[1] Preheat the oven to about 200 C / 390 F

[2] Cut the sweet potato into about 1 cm 2/5 inch thick slices. Put them in a oven proof mould, pour some olive oil over, season with salt and pepper. Bake in the oven for about 15 minutes until they are soft and golden.

[3] Mix avocado, finely chopped red onions, juice from lime / lemon, salt and pepper with the mixer until it has a creamy consistency.

[4] Fry the bacon slices and lay them on a  double sheet of kitchen paper to drain off the grease.

[5] Place the sweet potatoes slices on a serving dish and add a desired amount of avocado cream on each.

[6] Top the avocado cream with bacon slices.

Tip: If you form the bacon while it is hot, it stiffens in that shape.
