Carl Butler: This is essentially what the French call quiche. And the most common in this family is quiche lorraine containing ham. My weakness for the combination of tomatoes – mushrooms have tempted me to make this recipe. It was obviously a success; This is probably the most sought after dish in my restaurant . It is also common in France to make quiche on shellfish.

Carl Butler: When I have written about Flemish beef stew and mentioned that’s typical Flemish to use beer in cooking. Then one may begin to wonder where the utterly Swedish dish, Sjömanns Biff, comes from. I do not know.
