Spicy Cake with Honey / Krydderkake med Honning

Spicy cakes like this are perhaps mostly associated with Christmas and winter here in Scandinavia, but this cake tastes just as nice with a cup of tea or coffee in spring and summer as well.

This is a juicy, fresh cake with a nice taste of strawberries, which really makes it different and special. It is all right to use overripe berries, and you can also vary the seasoning as desired.

Bake him a gingerbread

Little touches like home-baked bread and cake, a thermos filled with old-fashioned soup, or a small jar of his favourite salad, make a box lunch much more like a meal at home.

The fact is, every hard-working man in our war industry deserves and needs heartier, tastier food than the average box lunch offers. The gingerbread pictured on this page is one part of a perfect answer. It’s light, velvety satisfying. It is well-blessed with homemade taste.

Try this tested recipe. It will make sufficient gingerbread for several generous lunch box servings plus enough for two dinners for a family of four. And it’s easy to bake when you use home-type flour like Kitchen Craft.

Seed Cake / Frøkake

A classic afternoon tea recipe found on picturebritain.com324_Seed Cake_post

The girl who runs picturebritain writes: When Miss Betty Barker hosts her exclusive tea party she serves a seed-cake that is so good, even the stuckuppity Mrs. Jamieson (who insists that it reminds her of scented soap) condescends to partake of it.

“Mrs. Jamieson was kindly indulgent to Miss Barker’s want of knowledge of the customs of high life; and, to spare her feelings, ate three large pieces of seed-cake, with a placid, ruminating expression of countenance, not unlike a cow’s.”

Perhaps you too will find seed-cake to be a mouthwatering confection fit for a proper tea (I trust that you won’t resemble a cow whilst indulging in it). This recipe comes from the most famous writer of cookbookery in British history, Mrs. Beeton herself. It was published in her book from 1861 “Book of Household Management”.

Elisabeth Helle who’s behind the recipe says: “I was given this recipe by my Danish mother-in-law and it is incredibly easy to bake. It takes 17 minutes from start to the cake is in the oven and the dishes washed. The cake is delicious and very juicy. It is also useful as basic recipe, since the spice can be replaced with cocoa.”
