Tarte au Jambon – Ham Tart

Oven temperature: 200° C / 390° F

Tart, with filling, can be frozen raw.

1 puff pastry *
4 large onions
2 tablespoons butter
2 hard-boiled eggs
150 g [5,3 oz] cooked ham
3 egg yolks
2 1/2 dl [0,5 pt] cream, 35 %
100 g [3,5 oz] cream cheese
Salt and pepper


[1] Knead the dough and leave it cold for a while. Meanwhile cook the filling.

[2] Clean and peel onions and cut them into thin rings. Sauté onions in butter over low heat until soft and transparent. Take the pan away from the heat.

[3] Hard boil 2 eggs, Remove the shell and chop them coarsely. Cut the ham into cubes and add the ham cubes and chopped egg  to the onions. Whip the egg yolks with cream and mashed cream cheese and add this to the onion mixture. Season with salt, pepper and finely chopped chives.

[4] Roll out the dough and dress a flan mould that is approximately 22 cm/5 in in diameter with it. Pour in the filling and bake the tart. Serve warm or cold with a bowl green salad or tomato salad as a side dish.

* Puff Pastry
150 g [5,3 oz] plain flour
100 g [3,5 oz] butter
1/2 tsp salt
1/2 lightly beaten eggs

Crumble butter into the flour, add salt and work the dough with 1/2 a beaten egg. Leave the dough to cool for 20-30 minutes.
