The Farmer’s Apple Cake

This cake is based on cottage cheese, which gives it a slightly acidic flavor that will go great with the sauteed apples wedges.

Round mould, 24 cm / 9 inch diameter
Oven temperature: 200° C / 390° F
Cooking: About 30 minutes

100 g [5,3 oz] butter
2 dl [0,4 pt] sugar
3 eggs
1 can (250 g / 8,8 oz ) cottage cheese
1 teaspoon salt
3 dl [0,6 pt] flour
1 teaspoon baking powder
2 apples
2 tablespoons butter
1 teaspoon cinnamon
1/2 dl [0,1 pt] hazelnuts, coarsely chopped
3 dl [0,6 pt] cream, 20%


[1] Beat butter and sugar light and porous. Add the eggs one at a time. Then stir in cottage cheese and flour mixed with salt and baking powder. Pour the batter in a well buttered and sprinkled mould.

[2] Peel the apples and remove the cores and cut the apples into wedges. Saute the apple wedges in a little butter in a frying pan and sprinkle with cinnamon. Press the apple wedges in the dough and sprinkle with chopped hazlenuts. Bake the cake in the middle of the oven.

[3] Cool the cake and serve it with lightly whipped cream.
