This cake is based on cottage cheese, which gives it a slightly acidic flavor that will go great with the sauteed apples wedges.
Round mould, 24 cm / 9 inch diameter
Oven temperature: 200° C / 390° F
Cooking: About 30 minutes
100 g [5,3 oz] butter
2 dl [0,4 pt] sugar
1 can (250 g / 8,8 oz ) cottage cheese
1 teaspoon salt
3 dl [0,6 pt] flour
1 teaspoon baking powder
2 tablespoons butter
1 teaspoon cinnamon
1/2 dl [0,1 pt] hazelnuts, coarsely chopped
3 dl [0,6 pt] cream, 20%
Beat butter and sugar light and porous. Add the eggs one at a time. Then stir in cottage cheese and flour mixed with salt and baking powder. Pour the batter in a well buttered and sprinkled mould.
Peel the apples and remove the cores and cut the apples into wedges. Saute the apple wedges in a little butter in a frying pan and sprinkle with cinnamon. Press the apple wedges in the dough and sprinkle with chopped hazlenuts. Bake the cake in the middle of the oven.
Cool the cake and serve it with lightly whipped cream.
