Toast Place Concorde

250 g [8,8 oz] minced beef
1 medium onion, finely chopped
2 egg yolks
2 tablespoons oil
1 1/2 tablespoons horseradish, grated
1 1/2 teaspoons mild mustard
2 teaspoons paprika
3/4 teaspoon celery salt
1/2 teaspoon pepper
1 heaped tbsp Cottage Cheese
2 tablespoons tomato ketchup
2 tablespoons mayonnaise
2 hard-boiled eggs, to taste
4 slices white bread


[1] Loosen the miced meat with a fork. Add all ingredients down to pepper, work those ingredients into the mince.

[2] Beat cottage cheese, 4 tablespoons boiling water, ketchup and mayonnaise into a froth. Add  two roughly chopped hard-boiled eggs if you chose to use  them and stir to mix the mayonnaise sauce.

[3] Fry the white bread in butter on both sides, in a frying pan. Distibute the miced meat mix on the toasts and place them in a heat proof mould. Gratin at 225 C / 435 F about 6 minutes.

[4] Add the sauce on top of the toasts and serve immediately.
