Tomato-Cheese Toast

Cheese sandwiches is a snack dish that never seems to go out of style.
I’ve found recipes for such from every decade through out the last
century and both decades in this. Cheese sandwiches really
deserves to be called a classic – Ted


6 slices bread
6 slices cheese
3 tablespoons chopped onion
1/2 cup chopped green pepper
6 tablespoons peanut oil
2 cups canned tomatoes
1 teaspoon salt
1/8 teaspoon pepper
2 tablespoons flour


Cook the pepper and onion in a frying pan in 3 tablespoons peanut oil over a moderate flame for about 5 minutes. Add the canned tomatoes and cook 10 minutes. Add the flour and seasonings mixed with 3 tablespoons of peanut oil. Boil until thick. Toast bread on one side. Reverse slices and cover each with slice of cheese. Melt cheese in oven or under broiler. Serve with tomato sauce.
