Town mayor toast With prawns toast or toast with luxurious touch of shrimp and caviar – perfect for starters!
200 g [7 oz] prawns in brine, peeled
1 dl [0,2 pt] mayonnaise
100 g [3,5 oz] caviar
2 tablespoons horseradish, fresh
black pepper, from a mill
10 slices white bread
butter, for frying, fresh
dill, for garnish
This is what you do
 Drain the prawns properly (you can squeeze the liquid out of them easily).
 Mix prawns, mayonnaise, roe (save some for garnish) and freshly grated horseradish.
 Season with sea salt, black pepper and a few drops of lemon juice.
 Punch out small round canapé sizeed toasts from the whire bread.
 Fry the bread in butter.
 Put a dab of the prawn mixture on each toast and garnish with caviar and dill.
