Traditional Danish Cold Potato Salad with Frikadells

Cold potato salad with frikadells is a nice old-fashioned Danish dish that can be enjoyed by everyone.

500 g [1,1 lb] minced 50/50 veal and pork
1 tsp. Fine salt
1 finely chopped onion
1 tsp. pepper
1 tsp. allspice
1 egg
2 dl [0,4 pt] whole milk
1 dl [0,2 pt] flour
Butter for frying
4 dl [0,8 pt] creme fraiche
1 bunch chopped chives
1 finely chopped challot
1 tbsp. Dijon mustard
1 tsp. coarse salt, pepper
750 g [1,65 lb] cooked potato, sliced

[1] Stir the minced meat with salt and add onion, pepper and egg. First stir in the milk and then the flour till you got a smooth farce. Put the farce in the fridge while preparing the potato salad.

[2] Stir creme fraiche with chives, challot, mustard, salt and pepper. Cut the potatoes into slices and turn them in the dressing. Form frikadells from the farce and fry them in the butter at even heat until golden and firm.

[3] Server with salad and bread.
