Traditional Norwegian Vegetable soup with Meatballs

Ground pork, a few vegetables and a bouillon cube or broth are all the ingredients you need to fill your plate with  this delicious, hot soup. Quick and easy.

250 g [9 oz] of finely ground pork
1 1/2 liter [3 pt] water + bouillon cube or broth
4 carrot in strips
1/2 piece of celeriac in strips
1 leek in slices


[1] Boil water + bouillon cube / broth and vegetables for about 10 minutes. Season with salt and pepper.

[2] Use a bowl of lukewarm water and a big teaspoon to make small meatballs. Dip one hand and the spoon in the water and scoop up a spoonfull  of ground pork and form the balls in in the palm of your hand with the spoon.

[3] Add the meatballs to the soup. Remove the saucepan from the heat and let the balls simmer for 5 minutes.

[4] Serve the soup with wholemeal bread.
