Troll cream is an almost magical dessert – that four simple ingredients can be transformed into such a fresh, sweet, airy and delicious dessert in just a few minutes is pure magic. You can make troll cream with other types of berries too, but troll cream made with cranberries will always be the original!
1/2 kg [1,1 lb] cleaned cranberries
200 g [7 oz] sugar
2 tsp vanilla
2 egg whites
This is what you do
Whip cranberries, sugar, vanilla and egg whites in a kitchen machine till most of the berries are crushed and a pink solid foam has formed. Server right away.
Tip: Troll cream can be served as it is, but many Norwegians usually serve it with custard or whipped cream.
