A delicious old-fashioned drink, perfect to sip on at a picnic or on a summer evenings.

Ingredients

300 g (11 oz) unpeeled fresh root ginger
225 g (8 oz) caster sugar
6 cloves
1 ½ lemons
1 (1 ¾ pint) soda water

Method

Finely slice 300g (11oz) unpeeled fresh root ginger. Put into a pan with 225g (8oz) caster sugar, 6 whole cloves and zest and juice of 1½ lemons. Add about 600ml (1pint) cold water to cover. Heat gently to dissolve sugar, then turn up heat and simmer for 10min. Strain through a fine sieve into a jug. Allow to cool for 10min, then top up with 1 litre (1¾ pint) soda water. Garnish with fresh mint leaves.
