White Fruit Cake

1/2 cupful butter
1 cupful sugar
1 3/4 cupfuls cake flour
1 teaspoonful baking powder 
1/4 teaspoonful salt
1/2 cupful chopped almonds 
3/4 cupful grated cocoanut
1/2 cupful finely cut citron 
1/2 cupful Sultana raisins 
1/2 teaspoonful each, almond and vanilla extract
5 egg-whites

Cream butter, add sugar gradually. Sift flour once, measure, add baking powder and salt, and sift again three times. Add flour slowly to first mixture, beating hard. Next add the nuts and fruits previously prepared and floured; then the flavouring extracts. Fold in lightly the egg-whites beaten stiff. Bake in a tube loaf pan from one to two hours. If desired, ice cake with a confectioner’s icing when ready to use.
