Wholemeal Bread with Carrots

The grated carrots and oatmeal makes this delicious bread extra juicy. Great freshly baked for lunch at the weekend and in the lunch box during the week. Bake more than two when you are at it and put a few in the freezer.

50 g [1,75 oz] fresh yeast
5 dl [1 pt] semi-skimmed milk
1 teaspoon salt
1 tablespoon honey
2 tablespoons soy oil
1 dl [0,2 pt] linseeds
2 carrot, roughly grated
2 dl [0,4 pt] oatmeal
300 g [10,5 oz] wholemeal flour
300 g [10,5 oz] flour


[1] Crumble the yeast into a bowl. Warm the milk to finger heat and stir the yeast into some of the milk. Add to the rest of the milk with salt, honey and oil. Stir in linseeds, coarsely grated carrots and oatmeal.

[2] Add the flour and knead the dough till it let go of the sides of the bowl. Set to rise for 30 minutes.

[3] Remove the dough from the bowl and cut it in two. Roll each item into a sausage and place them in two greased bread moulds. Let the loaves rise for 30 minutesfor 30 minutes.

[4] Brush the loaves with whipped egg and bake at the bottom of the oven at 200° C / 390° F for 30-35 minutes.
