Easy Chocolate Ice Cream With Apple Cream

Chocolate ice cream:
3,5 oz. / 100 g dark chocolate
4 tablespoons water
4,4 oz. / 125 g sugar
2 teaspoon vanilla
1 pt. / 1/2 l cream, 35%
Apple Cream:
2 egg whites
2 tablespoons sugar
0,4 pt. / 2 dl apple puree
2 teaspoons lemon juice

[1] Break the chocolate into pieces and malt it in water with sugar and vanilla. Cool the chocolate sauce. Whip the cream, stir it into the chocolate sauce and pour the mixture into a plastic box or a mould. Cover with freeze foil and let the ice cream stand in the freezer as indicated.

[2] Whisk the egg whites with sugar until they are completely stiff and whisk in the cold apple puree. Season to taste with lemon juice and place in the refrigerator.

[3] Distribute ice cream in serving glass, pour apple cream over and garnish with thin apple wedges dipped in pearl sugar. Insert a ice cream biscuit in each portion and serve dessert immediately.
