Instant Apple Slices

Baking: 35-40 minutes

Ingredients
2 raw apples, cut into approx. 2 cm [3/4 inch] cubes
2 beaten eggs
1 cup sultanas
1 cups self raising flour *
125 g [4,4 oz] unsalted butter, melted and cooled
1 1/2 cup brown sugar (you can substitute with white sugar)
2 tsp mixed spice
To finish:
1 tsp cinnamon combined with 1 tbsp golden caster sugar
Thickened Cream

* It is fairly easy to make your own self-raising flour. Just add 2 teaspoons of baking powder for each 150g/6oz/1 cup plain flour. Sift the flour and baking powder together into a bowl before using, to make sure the baking powder is thoroughly distributed (or you can put both ingredients into a bowl and whisk them together). If you are baking with cocoa, yogurt or buttermilk then add 1/4 teaspoon bicarbonate of soda (baking soda) as well as the baking powder as generally these ingredients need a little extra leavening boost.

Approach

[1] Mix all ingredients together thoroughly in a large bowl.

[2] Place in a greased and lined 18×28 cm / 7×11 inch slice tin.

[3] Bake in a moderate oven 180º C/355º F (Fan 160º C/320º F) for approximately 30-40 minutes.

[4] When cooked, sprinkle with cinnamon and sugar mixed together.

[5] Just before serving, drizzle with thickened cream and sprinkle with extra cinnamon sugar.
