Large Swedish Prawn Sandwich with Asparagus

A tempting sandwich recipe found in “Stora Boken om
Smörgåsar og Smörgåstårtor” (The Big Book on Sandwiches
and Sandwich Cakes) published in 1985Large Prawn Sandwich with Asparagus

Shrimp sandwiches are popular throughout Scandinavia.
Most restaurants and cafes have at least one variation
on the menu. This one is Swedish.

1 large slice of rye bread
1-2 tablespoons mayonnaise
1 sliced hard boiled egg
100-150 g [3,5-5,3 oz] peeled shrimp
2 light asparagus stalks
1/2 tomato
2 slices of fresh cucumber
Lemon wedge


Spread the mayonnaise on the bread. Cover with the sliced hardboiled egg. Top with the prawns. Garnish with asparagus, tomato wedges, thinly sliced cucumber, a fresh lettuce leaf, a lemon wedge and a small dill sprig.
