Skagen Toast

How about a little taste of Skagen? Lovely snacks with a glass of wine or beer.

15 baguette slices
100 g cold smoked salmon [3,5 oz.]
100 g peeled prawns [3,5 oz.] 
100 g leeks [3,5 oz.] 
100 g red onion [3,5 oz.] 
1 box of crème fraîche
olive oil
salt and pepper
1 teaspoon lemon juice
3 cloves of garlic

Set the oven to 160 C / 320 F.

Cut the baguette in one 3 mm / 0,2 inch thick slices and brush them with olive oil and season with salt and pepper.

"Dry" slices in the oven until they are crispy and rub them lightly with a garlic (makes some dense cut in slices)

Cut salmon, shrimp, leeks and onion into small pieces (as small as you manage and have time for)

Mix it all in crème fraîche with one teaspoon lemon juice and a little pepper and stir well.

Feel free to let the mixture rest in the fridge overnight! it taste better the next day.

Add as plenty of the mixture on toast and serve!
